La Bonne Mere of the Pastis House is a new French absinthe that is the result of much historical research. At the end of the 19th century many distilleries were producing absinthe all around Marseille and the Paul Devoille distillery have recreated this absinthe for the Pastis House. Star anise was more dominant than green anis in these Marseille absinthes and they were sweetened with liquorice infusion.
